Hearthstone Kitchen & Cellar is best known for opening at Red Rock Resort in October 2014 as the first off-Strip restaurant created by The Light Group, replacing the former Hachi restaurant as part of the resort's expanded restaurant row under the culinary leadership of Executive Chef and Partner Brian Massie. Massie, whose previous work included FIX Restaurant & Bar at Bellagio, STACK Restaurant & Bar at The Mirage, Citizens Kitchen & Bar, Red Square, and Diablo's Cantina, developed Hearthstone around a philosophy of seasonal American cuisine built upon partnerships with organic farmers, ranchers, and fishermen practicing sustainable agriculture.
