Japanese Ramen Gokan is a meticulous ramen counter where Higashi-Ikebukuro's resurgent food culture, Mamoru Okuji's twelve-year apprenticeship, Japanese regional ingredients and exceptionally layered clear broths converge in one of Tokyo's most acclaimed recent openings.

Set along Kasuga-dori near the Ikebukuro Rokutsumata intersection and just steps from Sunshine City, the seven-seat restaurant concentrates the experience around shoyu and shio ramen assembled from domestic chicken, shellfish, kombu and carefully sourced toppings. Okuji's cooking draws depth without clouding the broth, allowing poultry and marine flavors to remain distinct before thin noodles carry them through each mouthful. Pork, chicken, duck, wontons and egg progressively change the texture. The result is a Higashi-Ikebukuro ramen counter where an unusually disciplined ingredient program gives a simple bowl remarkable internal complexity.

Japanese Ramen Gokan is best known for Mamoru Okuji's transformation from aspiring musician into one of Tokyo's most closely watched ramen chefs. Okuji moved from Osaka to Tokyo at 24 to pursue his band, taking an unrelated restaurant job at Nishiazabu Gogyō before the band dissolved and he joined Chikaranomoto Company in 2009. His twelve years with the company included four years across Nishiazabu Gogyō and Kyoto Gogyō, launches including Hakata no Chikara, Dosanko Ginza No. 0 and Ichikabachika, product development and a final three months at Hakata Ippudo in Asakusabashi. Okuji left in 2021, then spent two years searching for premises with his wife Maiko before opening Japanese Ramen Gokan on April 12, 2023 in the former Menya Rokukando space. Recognition arrived almost immediately: Tokyo Ramen of the Year placed Gokan second overall among its 2023 newcomers, with the wonton shio ramen taking second in the new-shop salt category and the wonton shoyu taking third for soy sauce. MICHELIN Bib Gourmand selection followed for Tokyo 2024, beginning a run that continued through the 2025 and 2026 editions. Nissin Foods then translated Okuji's signature shio ramen into a nationwide cup-noodle release on February 24, 2025, barely two years after the independent restaurant opened.

Shio ramen makes the kitchen's layering clearest, combining broth from Hinai jidori, Nagoya Cochin and other Japanese poultry with Chiba clam, Hokkaido clam, Ibaraki shijimi and Hokkaido scallop. Rausu kombu deepens that foundation before a tare built around several salts and scallop concentrates the marine character into the clear golden soup. Straight thin noodles keep the broth prominent, then toppings alter the bowl piece by piece through Yamagata pork loin, gently cooked chicken breast, duck breast, wontons and a soft-centered Okukuji egg. The meat receives another layer of technique through charcoal cooking, low-temperature preparation and a final return to charcoal, bringing smoke and browning into a bowl otherwise driven by clarity. Japanese Ramen Gokan turns those separate extractions, temperatures and textures into one controlled progression, making the broth increasingly complex without losing the individual character of chicken, shellfish or charcoal.

Japanese Ramen Gokan works as the meal anchor for an afternoon exploring how Toshima accumulated radically different forms of cultural ambition, from ancient archaeology and early twentieth-century educational architecture to postwar manga.

Begin at Ancient Orient Museum, opened on October 5, 1978 as Japan's first museum devoted to the ancient Orient and now holding more than 5,000 objects spanning the Paleolithic through Islamic periods, including finds from its archaeological work in Syria. Continue to Jiyu Gakuen Myonichikan, where Motoko and Yoshikazu Hani commissioned Frank Lloyd Wright in 1921 after Arata Endo introduced the founders to the architect during his work on the Imperial Hotel; Endo subsequently completed further parts of the school complex. Conclude at Toshima City Tokiwaso Manga Museum, reconstructing the 1952 apartment where Osamu Tezuka arrived in 1953 before artists including Fujiko F. Fujio, Fujiko Fujio A, Shotaro Ishinomori and Fujio Akatsuka joined the creative community that formed around it. The progression moves from ancient West Asian archaeology through Wright and Endo's architecture into the extraordinary concentration of postwar manga talent at Tokiwaso, revealing the breadth of cultural history distributed across Toshima.
