Samgyeopsal Kimchan Shibuya is best known for opening on August 26, 2016 around its founder's principle that diners should leave full without spending heavily, building that concept around Japanese pork belly that reaches the griddle without ever being frozen. The original restaurant established its home at 30-5 Udagawacho inside Shibuya JOW Building, where the signature pork became the organizing idea of a Korean menu extending well beyond barbecue. Fresh samgyeopsal begins with thick-cut Japanese pork belly, its uncured, unfrozen meat meeting the hot griddle until the exterior develops a crisp brown crust and the rendered fat leaves the center juicy. Staff cut the pork into bite-sized pieces as it cooks, then kimchi can hit the same iron before pork, garlic and scallion salad disappear into lettuce wraps with sesame oil and salt or a stronger sauce. The wider kitchen reaches Busan through nakgopsae, simmering octopus, beef offal and shrimp in the house chile sauce, while jjukkumi samgyeopsal pairs pork with chewy baby octopus under a sweet-hot coating. Haemultang gathers shrimp, crab, octopus and shellfish into a gochujang-based seafood pot, and Korean fried chicken, sundae, japchae, tteokbokki, gamjatang, samgyetang and multiple jeon preparations extend the table through dishes built for sharing. Kimchan's strongest meals keep returning to the griddle, where unfrozen pork, rendered fat, caramelized kimchi and cool leaves preserve the simple preparation that has carried the restaurant through a decade in Shibuya.

Samgyeopsal Kimchan Shibuya works as the meal within an afternoon following Udagawacho through postwar department-store competition, Shibuya's rise as a center for recorded music and the small street that became inseparable from Tokyo fashion.
