Trunk Kitchen is best known for opening on May 13, 2017 as the main restaurant of the original TRUNK(HOTEL), the first property created by TRUNK Co., Ltd. and an early expression of the company's philosophy of β€œsocializing” hospitality in Jingumae. MOUNT FUJI ARCHITECTS STUDIO developed the hotel's architecture, Jamo Associates shaped its interior environment, TRUNK(ATELIER) directed the broader design concept and Tokyu Construction completed the property in April 2017 before the May debut. The restaurant opened within a hotel measuring 5,106 square meters across four above-ground levels and one basement, while its culinary character connected Japanese food culture with the multinational influences of Shibuya through ingredients sourced from domestic producers. Early menus already expressed that approach through Shibuya mozzarella burrata, kombu-cured wild sea bream, Tsukiji-sourced bouillabaisse and aged domestic Holstein sirloin with organic vegetables, establishing the Japanese-produce-meets-global-technique style that continues through the restaurant's current all-day format.

Japanese produce still supplies the physical foundation, with seasonal vegetables moving between raw brightness, braising and the concentrated sweetness of the grill before richer seafood and meat deepen the experience. Shibuya mozzarella brings cool dairy softness against fruit tomato and Minakami jamΓ³n serrano, while swordfish carpaccio gains aromatic lift from cucumber scented with tequila. Sadowara eggplant and cabbage shift the menu toward yielding vegetable textures, then grilled seasonal vegetables with chickpea hummus introduce smoke, nuttiness and a warmer savory register.
