Set along Via Gaspare Spontini near Corso Buenos Aires and just steps from Piazza Lima, the restaurant occupies a retail-heavy eastern Milan pocket distinguished by early-twentieth-century apartment houses and the Liberty architecture extending into the surrounding side streets. Warm timber surfaces and graphic wall treatments establish a compact contemporary room centered on quick counter-to-table service. The restrained dining area keeps attention on the burgers, with closely arranged seating and an open, informal configuration suited to the restaurant's street-food roots. Its smaller physical scale gives the Milan branch a direct relationship between ordering, cooking and eating, preserving the immediacy that accompanied Billis through its original Arezzo operation and mobile trucks. Billis Burger Milano is best known for carrying the burger project created in Arezzo in 2017 by brothers Salvatore, Domenico and Giovanni Billi with their brother-in-law Marco Terracciano into Milan. The business began from a small restaurant in Arezzo's Gragnone quarter, where the family centered its approach on handmade burgers and Tuscan ingredients before adding further restaurants and food trucks. Those trucks became especially consequential during the pandemic, when the founders adapted the business around formats capable of operating outside its original dining room; expansion accelerated afterward into a network spanning Arezzo, Milan and Lecco. Responsibilities also developed around the four founders: Salvatore directs product quality and works on meat selection and bread recipes, Domenico handles operations and supplier relationships, Gianni leads events and marketing, and Marco develops new combinations, special editions and visual design. The family opened a drive-format branch on Via Fiorentina in Arezzo before continuing its expansion into Lombardy, with the Via Spontini restaurant establishing Billis in Milan. A fifth permanent location followed at Valdichiana Designer Village in Foiano della Chiana in November 2025, placing the company back in Tuscany after its Lombard growth. Milan brought another milestone in December 2025 when Corriere della Sera's ViviMilano placed Billis first among the city's conventional hamburgers in a dedicated evaluation, singling out its Maremma beef and also positioning its smashed versions among the strongest entries. The founders have continued operating a mobile circuit alongside the restaurants, taking Billis trucks to street-food gatherings and music events across Italy in 2026 and preserving the traveling format that helped carry the family project beyond Gragnone.

The Billis burger begins with a bun mixed and baked in-house each day, followed by Maremma beef, Provola di Agerola, bacon, tomato, lettuce and the house sauce. Heat from the griddle softens the provola around the beef as the bacon adds a crisp, salty layer against the fresh vegetables. Cicciobello pushes the construction further through baked ham and a stuffed potato croquette, placing a soft fried center inside the bun beside Maremma beef, bacon and provola. Big Gym combines the same beef foundation with scamorza, aromatic roasted potatoes and a fried egg, whose yolk adds richness across the grilled meat and cheese. Double Smash changes the cooking mechanism by pressing two patties against the hot surface, increasing browned contact before raw red onion, pickles and bacon introduce acidity, crunch and smoke. PorkositΓ  adds smoked pulled pork and caramelized onion to the cheeseburger structure, deepening the meat profile through slow-cooked pork against the seared beef. Daily bread production, Tuscan cattle, melted Italian cheeses and distinct griddle techniques give the Milan operation a recognizable culinary structure across both thick burgers and smashed preparations.

Billis Burger Milano works as the meal stop for an architectural walk north of Corso Buenos Aires, where Milan's rapid early-twentieth-century expansion produced a concentrated sequence of Liberty residences shaped by floral ornament, reinforced concrete and increasingly experimental faΓ§ades.

Begin at Casa Frisia, designed by Giuseppe Boni and constructed between 1908 and 1909 as a four-story residence arranged around a C-shaped courtyard. Boni divided the street faΓ§ade horizontally, combining heavy gray cement bands across its lower levels with floral decoration above, then developed the entrance through wrought iron, a central balcony and a richly ornamented triple-arched opening that made the building one of the neighborhood's clearest expressions of Liberty craftsmanship. Continue to Casa Hahn, where Nazzareno Moretti developed another residential experiment during the opening decade of the twentieth century, using sculpted cement to move decoration vertically across the faΓ§ade. Putti appear above the principal balcony, and a peacock supports the curved upper balcony, turning structural projection into figurative ornament and giving the building one of the most distinctive animal forms in Milanese Liberty architecture. Conclude at Casa Felisari, commissioned from Giulio Ulisse Arata by PathΓ© CinΓ©ma and completed in 1914 on Via Settembrini, with its first two floors originally occupied by the French film company. Arata combined modern structural organization with Gothic references and complex projecting volumes, tying the residential expansion around Buenos Aires to an international company that had become one of early cinema's dominant industrial forces. The progression moves from Boni's floral treatment of the urban apartment house through Moretti's sculptural integration of the peacock into residential architecture and Arata's fusion of modern construction with PathΓ©'s expanding film business, revealing the architectural experimentation produced around Buenos Aires during Milan's early-twentieth-century growth.
