Tsuji moved to Italy in 2001, worked at the Tuscan seafood restaurant Da Antonio from 2002, joined Antica Trattoria La Torre in Chianti in 2004 and continued at Locanda Vecchia Pavia near Milan before returning to Japan in 2006. He became Biodinamico's chef in September 2009 and departed for Convivio in 2012. The restaurant's name derives from the Italian term associated with biodynamic agriculture, a choice connected with Salone Group's early commitment to natural wine. In February 2018, Biodinamico and fellow Shibuya restaurant Bacari da Porta Portese ended service at their existing locations and combined in a larger Jinnan restaurant, reopening on February 14 under chef Issei Yuasa.
