Churrascaria Brasa, Milan

Churrascaria Brasa is an exuberant Brazilian steakhouse where Calvairate's eastern food-trading district meets tableside churrasco, live Brazilian music and the communal dining rituals of the rodΓzio.

Set along Via Cesare Lombroso near Via Varsavia and just steps from Milan's vast wholesale food market, the restaurant occupies an eastern district whose twentieth-century development became deeply connected with the movement, preparation and distribution of food. The large dining room uses Brazilian colors, timber surfaces and open gathering areas to establish a setting suited to long dinners and group celebrations. Passadores circulate between tables carrying skewers directly from the grill, carving individual cuts onto plates as successive meats leave the fire. Live musicians and DJs extend selected services beyond dinner, with Brazilian repertoire and dancing turning the room into a performance setting as the evening develops. The result is a Calvairate churrascaria where fire, tableside carving and Brazilian music give a large Milan dining room the cadence of a traditional rodΓzio.

Churrascaria Brasa is best known for establishing a full Brazilian rodΓzio operation on Via Lombroso by 2022 and subsequently expanding the format through distinct churrasco services, Brazilian music and recurring cultural programming. Singer Priscila Ribas and guitarist Vinicius Surian performed there in April 2022, placing live Brazilian music inside the restaurant during its early operating period and establishing a connection that developed into recurring performance nights. The restaurant subsequently organized its churrasco around three defined formats: Gostinho do Brasa built a single rotation around eight cuts, Sabor Total do Brasa expanded service to twelve unlimited cuts and Rainha do Brasa concentrated the rotation on eight to ten beef preparations. Sunday programming joined an unlimited Brazilian apericena with live performance, and by 2026 Jayme Costa and DJ Muller were leading a recurring combination of pagode, broader Brazilian repertoire and dancing. Costa's relationship with the restaurant expanded into its 2026 New Year celebration with Banda do Prazer, when Brasa increased the churrasco to fourteen or fifteen cuts, assembled a buffet of 35 to 40 preparations and scheduled live music through the early morning. Chef Lu introduced another regional dimension through a monthly Saturday brunch devoted to the cooking of northeastern Brazil, widening the restaurant's cultural range beyond the southern grilling tradition at the center of churrasco. A 2025 Travellers' Choice distinction followed this evolution, marking formal recognition for a restaurant that had developed from Brazilian steakhouse into a recurring Milan venue for food, music and social traditions from multiple parts of Brazil.

Picanha establishes the central churrasco sequence through the fat-capped rump cut, grilled on skewers and sliced directly at the table before picanha de tira changes the same section of beef through a different cut. Costela introduces the deeper flavor and softer fibers of beef rib, then fraldinha, alcatra, maminha, contra-filé, chuck roll and Denver steak move through flank, rump and shoulder textures as the passadores circulate. Cupim brings one of the meal's most specifically Brazilian cuts through the fatty hump of zebu cattle, joined by linguiça, chicken, pork ribs and garlic picanha across the wider rotation. Feijoada supplies black beans and pork beside white rice, and farofa adds toasted cassava flour with bacon and onion; fried cassava, polenta and banana create crisp and starchy counterpoints around the grilled meats. Coxinha, bolinha de queijo, risoles and pão de queijo establish the opening through fried doughs, cheese and filled snacks before the skewers begin dominating the table. Caipirinha joins cachaça with lime at the bar, and desserts close the sequence through passion-fruit mousse, spooned brigadeiro, coconut manjar, pudim and cinnamon-grilled pineapple.

Churrascaria Brasa works as the dinner endpoint for an exploration of eastern Milan's century-long transformation into a specialized food district, following the architecture and institutions that successively moved wholesale trade away from the historic center.

Begin at Palazzina Liberty Dario Fo e Franca Rame, designed by Alberto Migliorini in 1908 as part of the new fruit-and-vegetable market opened in 1911, with iron-framed windows, floral ceramic decoration and a cafΓ©-restaurant serving merchants inside the sprawling complex. The surrounding market disappeared after wholesale produce trading moved east in 1965, yet the pavilion survived and entered a radically different cultural chapter in 1974 when Dario Fo, Franca Rame and La Comune occupied it, staging theater there through years of conflict over the building's use. Continue to Ex Macello di Milano, whose origins reach back to municipal engineers Giannino Ferrini and Giovanni Filippini's studies of 1912-1914 for a 300,000-square-meter slaughterhouse complex near Porta Vittoria's freight infrastructure. War delayed construction, Antonio Cecchi completed the project in 1924 and subsequent additions preceded the 1929 transfer of Milan's municipal slaughterhouse to Viale Molise, concentrating animal processing beside the city's expanding eastern food infrastructure. Conclude at Mercato Ortofrutticolo di Milano, developed after Ortomercato S.p.A. was formed in 1956 and the first stone of the new wholesale market was laid on June 25, 1960 in the presence of President Giovanni Gronchi. Commercial activity began in August 1965 on Via Lombroso, replacing the earlier Corso XXII Marzo complex and initiating the site's evolution into the present food-market district, where the produce operation alone now handles more than 750,000 tonnes annually. The progression moves from Migliorini's surviving pavilion for the 1911 produce market through the vast 1929 slaughterhouse complex into the 1965 transfer of wholesale produce trading to Via Lombroso, tracing the eastward migration of Milan's food infrastructure directly toward the district occupied by Churrascaria Brasa.
