SΓ©zanne, Tokyo

SΓ©zanne is a three-MICHELIN-starred French restaurant where Marunouchi's polished character, exacting technique, exceptional Japanese produce and AndrΓ© Fu's restrained interiors frame one of Tokyo's most accomplished fine-dining experiences.

Set within Four Seasons Hotel Tokyo at Marunouchi near Sotobori-dori and just steps from Tokyo Station, SΓ©zanne occupies the seventh floor behind Maison Marunouchi, opening into a light-filled room with broad windows and direct views into the kitchen. Hong Kong architect and designer AndrΓ© Fu shaped the interior around pale tones, natural materials and measured geometry, while a separate salon introduces the restaurant through Champagne before the dining room. Christofle cutlery and Baccarat glassware continue that precision at table, with the open kitchen keeping the cooks visually connected to the room throughout service. The result is a composed Marunouchi dining room where French refinement and Tokyo precision meet without allowing luxury to overwhelm the cooking.

SΓ©zanne is best known for the extraordinary four-year tenure of British chef Daniel Calvert, who opened the restaurant on July 1, 2021 after a career that took him from Pied Γ  Terre in London to Thomas Keller's Per Se in New York, where he became sous chef at 23, before voluntarily dropping to commis under Γ‰ric FrΓ©chon at Epicure in Le Bristol Paris because he wanted to master French cooking in France. Calvert then moved to Hong Kong in 2016 to lead Belon, inherited a struggling dining room, drafted his resignation in 2018 and abandoned it the morning an email arrived announcing Belon's debut at No. 40 on Asia's 50 Best Restaurants; MICHELIN recognition followed, and Belon climbed to No. 4 in Asia by 2020. Tokyo gave Calvert his next challenge, and SΓ©zanne moved through MICHELIN at exceptional speed: one star in the 2022 guide, two in 2023 and three in 2025, while Asia's 50 Best Restaurants placed it No. 1 in 2024 and The World's 50 Best Restaurants elevated it to No. 7 in 2025. Calvert departed on March 31, 2026 after selecting fellow British chef Stephen Lancaster as his successor, and Lancaster assumed command on April 1 following a career that included Midsummer House in Cambridge and Oaxen Krog in Stockholm. The handover preserved a restaurant whose founding chef had taken it from opening night to three MICHELIN stars, the summit of Asia's ranking and the world top ten before leaving to establish his first independent restaurant in Tokyo.

Calvert's cooking established SΓ©zanne through French technique sharpened by the places where he had worked, with Japanese ingredients entering preparations through decisions rooted in season and provenance. His years at Epicure remained visible in fish cookery demanding precision on the bone and sauces completed to order, while Hong Kong left traces through combinations such as gamecock marinated in vin jaune that recalled Cantonese drunken chicken. Hokkaido venison became a recurring preparation, and later menus paired Yamaguchi fugu and shirako with roasted kegani sauce while Saga saffron entered bouillabaisse, drawing Japanese products into recognizably French structures. The Champagne program reaches back to the restaurant's name, borrowed from SΓ©zanne in France's Champagne region, giving the cellar a direct geographic connection to the project Calvert created in Tokyo.

SΓ©zanne works as the culminating dinner within an afternoon tracing Marunouchi through the railway architecture, Meiji-era corporate ambition and art patronage that built Tokyo's premier business district.

Begin at Tokyo Station, whose red-brick Marunouchi building opened in 1914 from designs led by Tatsuno Kingo, giving the capital a central rail terminus whose later restoration returned the surviving structure to its original three-story profile. Continue to Mitsubishi Ichigokan Museum, where Josiah Conder's 1894 Queen Anne-style office building introduced Western commercial architecture to Marunouchi before demolition in 1968; its meticulous reconstruction reopened as a museum in 2010 with collections concentrated around late nineteenth- and early twentieth-century art. Conclude at Marunouchi Building, whose 1923 predecessor introduced express elevators and Japan's first shopping arcade incorporated into an office building, helping shift the district from Mitsubishi's earlier red-brick β€œIccho London” toward the American-influenced commercial scale that followed Tokyo Station's arrival. The sequence moves from the railway gateway that reorganized Central Tokyo through Conder's architectural legacy into the commercial experiment that established Marunouchi's modern scale before SΓ©zanne brings the outing upstairs for a restaurant shaped by another international succession of British, French, American, Hong Kong and Japanese influences.
