Miyazaki had spent 11 years at Ippudo before striking out independently, and a 2014 trip to Paris helped push his cooking toward vegan ramen; that year he placed a vegan Veggie Soba on the permanent menu, followed in 2015 by brown-rice noodles from a Shimane farmer that allowed him to develop a gluten-free bowl for diners with wheat allergies and celiac disease. Soranoiro entered the MICHELIN Guide Tokyo 2015 as a Bib Gourmand and retained the distinction in the 2016 and 2017 editions, while Miyazaki subsequently extended his work across multiple shops built around different ramen concepts. Tokyo Ramen of the Year later ranked Soranoiro fourth in its 2019 grand-prize standings, adding another major distinction to a career that had turned vegetables, vegan cooking and dietary accessibility into serious subjects within Tokyo ramen.

Shoyu ramen begins with Amakusa Daio, among Japan's largest native chicken breeds, combined with aromatic vegetables before raw soy sauce from Oka Naozaburo Shoten sharpens the broth with fermented depth. Mushroom Veggie Soba moves in another direction, building its broth from mushrooms, vegetable stock and soy milk for a rounded texture that carries earthy flavor without relying on the conventional animal-fat architecture of ramen. Begin at Tokyo Station Marunouchi Building, opened in 1914 from Kingo Tatsuno and Manji Kasai's red-brick design, damaged by the May 1945 air raids and reduced from three stories to two before a five-year restoration completed in 2012 reinstated its third floor and twin domes above newly installed seismic-isolation systems. Continue to Kitte Marunouchi, where Tetsuro Yoshida's 1931 Tokyo Central Post Office survives within JP Tower through preserved white-tiled exterior sections and the reconstructed postmaster's office, carrying a major work of Showa modernism into the contemporary complex. Conclude at Intermediatheque, opened in 2013 by Japan Post and the University Museum, the University of Tokyo, across 2,996 square meters of the former post office, where scientific collections accumulated since the university's 1877 founding include a 159-centimeter Belgian globe commissioned after the 1923 Great Kanto Earthquake and delivered in 1937. The progression carries Marunouchi from Tatsuno and Kasai's national rail gateway through Yoshida's postal architecture into a university collection spanning generations of Japanese scholarship, giving Soranoiro Nippon an apt place inside a district built around movement, exchange and reinvention.
