Set along a side street near Roppongi-dori and just steps from The National Art Center, Tokyo, the restaurant assembles burritos, tacos, salads and rice bowls directly in front of each diner. Tortillas, beans, cilantro-lime rice, grilled meats, vegetables and several salsas become interchangeable components, allowing a single order to move substantially in richness and heat. The streamlined format descends from the first Frijoles opened in Azabujuban in 2009, which introduced Tokyo to a style of large American burrito then far less common in the city. The result is a Roppongi restaurant where speed comes from a tightly organized cooking system without reducing lunch or dinner to standardized combinations.

Frijoles Roppongi is best known for extending a burrito concept that began in Azabujuban on November 4, 2009 and became an early force in Tokyo's American-style burrito boom. The original Frijoles entered the city with a distinctive assembly-line model: diners chose burritos, fajita burritos, tacos or salads before selecting chicken, carnitas, steak or a vegetarian filling and building the remainder from fifteen toppings. The kitchen made its own tortillas from an original recipe, cut its vegetables in-house and cooked dried beans with vegetables and herbs, placing preparation behind a format designed for rapid service. A burrito weighed 450 grams at the 2009 debut, giving the restaurant an American scale conspicuously different from much of Tokyo's quick-service lunch market. Frijoles Roppongi followed on February 28, 2011, carrying that system into another of Tokyo's most internationally oriented dining districts. By 2013, the United States Department of Agriculture was discussing Frijoles within Tokyo's growing burrito trend and naming branches in Azabujuban, Akasaka and Roppongi; the company has since expanded across Tokyo to locations including Otemachi, Ebisu-Daikanyama, Tokyo Midtown Yaesu, Shibuya Dogenzakadori, Nihonbashi Muromachi and Tamachi Tower.

A burrito begins with a warmed flour tortilla before cilantro-lime rice and beans establish the soft, substantial base beneath the chosen filling. Carnitas takes the combination toward slow-cooked pork richness, then tomato salsa, hotter chile-driven salsa and fresh vegetables can sharpen successive mouthfuls. Guacamole introduces cool avocado richness against those brighter components, and sour cream can soften the heat before the tortilla closes around the complete mixture. Tacos expose the same ingredients differently by reducing the starch surrounding them, giving grilled meat, salsa and vegetables a more immediate presence with each bite. Frijoles makes customization meaningful because rice, beans, meat, salsa, dairy and avocado alter the balance together, turning one preparation system into meals that can range from restrained to densely layered.

Frijoles Roppongi works as the meal anchor for an afternoon tracing the district through postwar design, contemporary art and the ambitious museum architecture that transformed Roppongi into one of Tokyo's principal cultural quarters.
