Ryuzu, Tokyo

Ryuzu is a two-MICHELIN-starred French restaurant where Roppongi's polished dining culture, Ryuta Iizuka's Japanese produce and the precision of classical French technique converge in a room designed around quiet concentration.

Set below street level near Roppongi-dori, Ryuzu was conceived with an unusually high ceiling, natural light descending into the basement and an elevator that Iizuka specifically wanted when selecting a home for his independent restaurant. Walnut flooring, substantial stone surfaces, Venetian glass and Armani lamps temper the formality with warmth, while the dining room keeps tables sufficiently separated for the cooking to command attention. Niigata ingredients connect the room to Iizuka's native Tokamachi, with Noto vegetables extending that relationship between French technique and Japanese producers across the changing seasons. The result is a composed Roppongi restaurant where architecture, service and produce prepare the table for cooking built on decades of disciplined craft.

Ryuzu is best known for Ryuta Iizuka's progression from Japanese hotel kitchens through JoΓ«l Robuchon's organization into his own restaurant, opened in Roppongi on February 1, 2011. Born in Tokamachi, Niigata in 1968, Iizuka graduated from Tsuji Gakuen in 1988, worked at Dai-ichi Hotel Tokyo Bay, Hotel The Manhattan and L'Effervescence predecessor L'Eau Γ  la Bouche, then joined Taillevent-Robuchon as a section chef in 1994 before training at JoΓ«l Robuchon in Paris, Troisgros in Roanne, Jean-Paul Jeunet in Arbois and LΓ©a Linster in Luxembourg. He became sous-chef at L'Atelier de JoΓ«l Robuchon in 2004 and chef in September 2005, leading the restaurant for five years before leaving a senior position to build Ryuzu under his own name. Opening month was followed almost immediately by the March 11 earthquake, leaving Iizuka to carry construction debt and ingredient costs through six months of sharply reduced business before Ryuzu earned one MICHELIN star in the 2012 guide and two in 2013. MICHELIN Guide Tokyo 2026 extended that two-star run to fourteen consecutive editions, Gault&Millau 2026 awarded Ryuzu 17/20, and The Best Chef Awards selected Iizuka with One Knife, placing the independent restaurant he opened after Robuchon within an international field fifteen years after its debut.

Iizuka's Yairo shiitake tart concentrates the Ryuzu kitchen into crisp pastry, mushroom duxelles, thick Niigata shiitake and a translucent layer of lardo that softens over the heat, releasing pork richness into the mushroom beneath. The dish began with prosciutto trimmings during his L'Atelier de JoΓ«l Robuchon years and an idea carried from a 1993 cep tart at Michel Bras, then found its Japanese form when unstable imported mushrooms led him toward the deeply aromatic shiitake he remembered from childhood. Seasonal cooking develops that same attention to Japanese ingredients through preparations such as ayu enclosed in pΓ’te brisΓ©e with its liver sauce and crisped bones, while house caviar from Haruno is seasoned at 2.5 percent with salt made from Niigata seawater. Ryuzu reaches its clearest culinary character when Iizuka lets French structure concentrate a Japanese ingredient until the technique recedes and the produce carries the final impression.

Ryuzu works as the closing meal within an afternoon connecting three institutions that recast Roppongi through contemporary design and art before Iizuka's kitchen turns the same district toward French gastronomy.

Begin at 21_21 Design Sight, opened in March 2007 after Issey Miyake's decades-long campaign for a Japanese design institution, developed with Taku Satoh, Naoto Fukasawa and Noriko Kawakami inside Tadao Ando's largely subterranean building at Tokyo Midtown. Continue to The National Art Center, Tokyo, opened in January 2007 inside Kisho Kurokawa's final completed architectural project, whose undulating glass facade encloses an institution created without a permanent collection and built around changing exhibitions. Conclude at Mori Art Museum, opened on the 53rd floor of Roppongi Hills Mori Tower in October 2003 under founder Minoru Mori, establishing contemporary art at the summit of the 17-year Roppongi Hills redevelopment before receiving 6.65 million admissions across its first five years. The route moves through Miyake and Ando's design project, Kurokawa's museum architecture and Mori's contemporary-art institution before Ryuzu completes the afternoon through Iizuka, another creator who spent decades absorbing international practice before building something distinctly his own in Roppongi.
